We use California's most sought after apricot, Royal Blenheim, to create this simple, delicious jam. The fruit comes from See Canyon Ranch in San Luis Obispo (the heart of California's Central Coast region). While not certified organic, See Canyon uses organic practices and doesn't spray; they also employ "dry farming" in which the trees rely on ground water and rainfall, an environmentally friendly and more sustainable farming practice that also performs the neat trick of intensifying the fruit's flavor. Unlike other Paragon Jams flavors, we don't add any herbs or spices to the apricot jam -- the great sugar-acid balance delivers so much flavor, we figured there was no point in trying to improve on it.

That apricot jam is PERFECT. Tart/sweet with plenty of tart. My 94 year old mom agrees. Hard not to eat it right from the jar with a spoon. It tastes like Summer and Love. We will try it on chicken or pork soon.

Sometimes apricot jams are overly sweet. This one is just right. Tart enough to taste at the back of the tongue and just enough sweetness to provide a balance.

I found this jam to be outstanding. The first time I spread it on toast, and I was struck by how bright and apricot-y the flavor was. They did a great job getting the essence of the fruit across without destroying it during the canning process. The next time I used the jam was on my grill, where we utilized the apricot jam to make apricot glazed pork chops. We brushed the glaze on the chops during the final minutes of cooking so that it would not burn, and then microwaved some additional sauce to serve at the table. (FYI, when you heat up the jam it becomes much more viscous and can easily be turned into a sauce). Lastly, if you are in search of a unique desert, try topping your favorite toasted bread with a high quality ricotta cheese and then spreading the jam over the top. It's absolutely delicious!

I fear our use of this delicious Apricot Jam was rather pedestrian and unimaginative---with butter, on homemade Sour Cream Dinner Rolls---but still, so very flavorful, with a great consistency.

Delicious giant apricot taste! Sublime on freshly baked biscuits, great mixed with a little dry mustard as a dip for crispy, salty things and decadent spooned right out of the jar and into your mouth!
